Margarita Chicken
Recipe 


Start with some good sized boneless and skinless chicken breast.  Put them is a container deep enough to allow them to be completely covered with the liquid.  Chicken breast should be completely covered with a good margarita mix, to this add enough tequila (yes this is necessary,  it helps tenderize the meat and adds flavor) as you were making this to drink.  Squeeze one or two limes (depends on the amount of liquid).  Cover the container and allow the chicken to marinate in the refrigerator over night.  The longer it marinates the better the flavor. 
         On a grill with a hood cook the chicken over indirect heat.  When the breast are fully cooked cover with your favorite barbecue sauce.  I like to put the meat over the direct heat for this step as it sears the sauce and the meat.  After the sauce has caramelized cover the meat with cheese (your choice). Pull the meat off the direct heat cover the grill again until the cheese fully melts and it is ready to serve.
