Chef Nick's 
Baked Onions
 

Ingredients:

4 to 6 large onions cut into 1/2 inch rings (separated)
half a stick of butter (can also add olive oil)
pinch of sugar
salt and pepper to taste
half a cup of vermouth
half a teaspoon of monosodium glutamate (Accent)
one half to one cup of grated parmesan cheese

Directions:

In a LARGE dutch oven or heavy pan saute' the onions and 
butter until tender (approximately 8 to 10 minutes).
Add the sugar, salt and pepper and Accent, cook for and additional 3 to 5 minutes.  Add the vermouth and cook for 3 to 5 minutes more.
Pour the onions and liquid into a casserole sprinkle with the cheese and place into the preheated oven (350 degrees).  Bake for 20 to 30 minutes.

Will serve 6 to 8.
