
Ken’s Grillin' Chillin'
Chili
3lb.
ground beef
5
tomatoes diced
2
large cans kidney beans
2 bell
peppers diced
3
chili peppers chopped
2
jalapeno peppers sliced
2
large onions diced
1
carrot diced
2
limes (1 juiced, 1 juiced and sliced)
2”x
2” block of Velveeta
4 tbs.
Old Bay seasoning
4 tbs.
Chili powder
2 tbs.
Honey
2
sprigs Cilantro diced
24
hrs. before cooking prepare the meat by combining the meat,1 sprig diced
cilantro, lime juice, 2 tbs. Old Bay, 2 tbs. Chili powder, and 1 diced tomato in
a 1 gallon zip lock bag. Mix all
together. Leave in refrigerator for
24 hours.
In
crock pot place the rest of the diced tomatoes, 2 cans of kidney beans,
The
diced bell peppers, the diced onions, the diced carrot, 1 tbs. Old bay, and 1
tbs. Chili powder. Set crock pot
for low and cook for 24 hrs. The
next day, combine the meat in the crock pot and continue to cook for an
additional 12 to 20 hours. During
the last 3 to 4 hours of cooking add the rest of the ingredients.
After
the initial cooking in the crock pot, remove all of the solid ingredients and
pour the liquid into a sauce pan, and bring to a boil, reducing the liquid,
recombine the ingredients together and after cooling place in the refrigerator
to set.
